The cake was crafted by Fiona Cairns, a well-known British baker known for her timeless and elegant patisserie designs. During an interview, she shared her experience of working for the royals, calling it her 'career-defining' moment, and shared some of her fond memories. As reported by Marie Claire, she said, “I get goosebumps thinking about that phone call. The couple [William and Kate] actually did reach out to us. We went to Clarence House and had a meeting with the princess, and we had a cup of tea." Then, just three days later, she received a phone call from the palace that changed her life.
Revealing the Royal couple's choice, Fiona said, “The Prince and Princess of Wales asked for a classic fruit cake, which is the cake used for all the royal weddings since Queen Victoria’s day.” She further added, “The cake actually served for the wedding breakfast served about 600 [guests], and weighed about 70 kilos.” The final and complete masterpiece consisted of 17 separate cakes, which were arranged in a pattern that formed eight tiers. It was more than three feet tall and stretched just as wide.
The baker also opened up about what it was like to be part of a grand royal wedding, admitting the pressure was intense, especially since the Queen herself visited her, instantly raising the stakes. “On the day of the wedding, all that mattered to me, my husband, and the team was, what did the couple think of the cake?” she said. Though it may have seemed like a private family affair to some, the guest list for the event included some of the world’s most prominent and admired royals, but Fiona and her team remained unfazed.
What's worth noting is that Kate even called Fiona later on to thank her. She recalled the moment and said, “My mobile rang [on the day], and it was actually the princess. She was just thanking us all for taking part in such a special day.” Meanwhile, William and Kate’s romantic journey began in 2001 when they crossed paths as students while studying at the University of St Andrews in Scotland. After dating each other for almost a decade, including a brief split, they made their relationship official in 2010, when William proposed to her using Princess Diana’s iconic sapphire ring, as reported by Brides.
